Perception combines incoming sensory information with memory, expectation, attention, and recent context. That is not a defect; prediction helps the nervous system interpret noisy signals efficiently. In tasting, it means a label, colour, price, story, or neighbour’s confident declaration can influence what receives attention and how it is described.

What the famous studies do—and do not—show
Colour-context and price-cue experiments demonstrate effects under particular tasks and conditions. They do not prove that every taster is fooled, that expertise has no value, or that the liquid contributes nothing. The defensible conclusion is narrower: identity cues can affect reports, so good methods preserve independent observations and use controls where useful.

Adaptation changes the next sniff
Repeated or prolonged exposure often reduces sensitivity, and recovery varies with compound and person. A crowded flight can therefore turn sequence into a hidden variable. Short sniffs, clean air, time, and returning to an earlier sample are practical controls. Coffee beans can provide contrast, but they are not a chemical reset button.

Colour can recruit the wrong vocabulary
Visual information arrives before aroma and can prime expectations about fruit, age, concentration, sweetness, or even flavour identity. Experiments in wine and other foods show that colour cues can redirect description under particular conditions. The lesson is not that colour is meaningless. Appearance can provide legitimate information about the sample. The methodological point is to record what you see as appearance, then notice when the visual hypothesis begins writing the aroma section for you. In a controlled exercise, opaque glasses or altered lighting can reduce colour cues, but those controls answer a specific question rather than making the tasting universally superior.

Price changes experience through expectation
Price, prestige, critic scores, and producer stories can shape attention and reported pleasantness. That does not prove enjoyment is fake. Experiences routinely combine sensation with expectation, memory, identity, and context. If the question is whether price predicts your blind preference, conceal it until after the first note. If the question is whether a famous bottle creates a meaningful occasion, the story is part of the experience. Problems begin when one kind of answer is presented as the other. A good tasting method decides which question is being asked before the cork comes out.

Groups create both insight and gravity
Discussion can reveal vocabulary, direct attention to overlooked features, and help tasters compare internal reference points. It can also create conformity, anchoring, and the irresistible gravitational field of the most confident voice. Protect a private first note, then discuss. Ask each person for one observation before any identity guess. When a new descriptor appears, mark it as noticed after discussion. This does not disqualify it; it preserves the sequence of evidence. A tasting group should be a collection of sensors comparing reports, not a small court waiting for the loudest barrister.

Blind, double-blind, and coded are not synonyms
In a coded tasting, labels may be hidden while the organiser knows the samples. In a double-blind design, neither participants nor the person presenting samples knows the identity during the trial. Informal wine tastings rarely need full clinical machinery, but precise language prevents exaggerated claims. Randomising order can reduce systematic sequence effects; balanced orders help when several people participate; identical vessels and equal pours remove obvious cues. These controls improve the answer to a defined question. They do not eliminate individual variation, expectation about the category, or the possibility that Tuesday’s nose behaves differently from Saturday’s.

Practice: prompt after, not before
Write an unprompted note for a coded sample. Then read a plausible aroma prompt and retaste. Keep any new descriptor in a separate ‘after prompt’ line. Finally take clean air and return again. This preserves evidence about your first report while showing how language and adaptation can redirect attention.
