Vernaccia does not need a long résumé to make an entrance. Look for lemon, apple, white flowers, then pay attention to the shape: acidity keeps it alert, body keeps the footsteps light, and texture. Its classic starting point is dry Tuscan white.

Vernaccia di San Gimignano is documented from the Middle Ages and gave Italy one of its earliest modern DOCs in 1966.
