The period in context
At Gadachrili Gora and Shulaveris Gora, researchers examined large pottery jars from early farming settlements. Organic-acid residues, grape pollen, starch, phytoliths, and the local ecology together support the interpretation that people made and stored grape wine here roughly eight thousand years ago.
That conclusion is deliberately narrower than the popular claim that Georgia ‘invented wine’. Fermentation may have occurred earlier in containers that did not survive, at sites not yet found, or with fruits that left different traces. Archaeology supplies the earliest evidence recovered so far—not an eyewitness account of the first batch.

No one molecule proves wine by itself. The interpretation comes from several chemical, botanical, archaeological, and environmental clues considered together.
These communities left no known written recipes. Repeated practice, observation, and oral transmission must have carried the technique.
